I cooked rice and Brussels sprouts and Parmesan crusted fish (recipe here Herb-crusted fish with rice). It was absolutely divine! My two year-old did NOT think so, he wanted no parts of the rice or fish and definitely not the Brussels sprouts! I tried to calmly continue eating, but I literally had no Earthly idea what this child would eat because the cabinets were stocked with cereals, pancake mix, and oatmeal; all too sweet to be considered a healthy toddler supper. He ran from the dinner table to Elmo, playing in Daddy and Mama’s bedroom (the #1 spot where all kids want to be).
